Carefully butchered by our chefs from just beneath the shoulder, it’s deeply marbled, with a full-bodied flavour, and – alongside its fillet-like tenderness – it’s a firm favourite and regular choice for those in the know.
Cooked simply, as great meat should be — seasoned well, caramelised over charcoal and given time to rest — the Denver is perfect for those seeking something a little lighter in the height of summer. Its rich, savoury depth is balanced by the sun-ripened sweetness of our Heritage Tomatoes and the fresh leafiness of Roy’s Summer Salad — both recent menu additions that celebrate the best of the season’s bounty.
Under the expert guidance of our friends and farmers, Ian and Philip Warren, this distinctive steak helps us honour and make the most of the whole animal — turning a lesser-known cut into something that’s easy to love, and hard to forget. And, at just £15, the Denver is both kind on the wallet and punching well above its weight.
